Uganda's Agricultural Deep-Processing Giant: Introducing a 200kg Industrial Vacuum Low-Temperature Frying System to Break Through the High-Sugar Caramelization and Mucilage Gelatinization Bottlenecks of Tropical Jackfruit

1. Client Background and Challenges

Client Background: A leading Ugandan agricultural product deep-processing and export enterprise, leveraging East Africa's premium tropical fruit resources, specializing in jackfruit crisps, dried mangoes, and tropical fruit and vegetable snacks.

Pain Points of the Jackfruit Processing Industry:

Severe caramelization caused by extremely high sugar content and natural mucilage: Jackfruit contains over 20% fructose along with abundant plant gums. Traditional hot-air drying or high-temperature frying readily triggers intense Maillard reactions, causing the jackfruit flesh to turn black, develop bitterness, and produce a burnt flavor within minutes.

High-fiber structure prone to absorbing residual oil: Jackfruit flesh has a naturally stringy, fibrous structure with strong oil absorption. After traditional frying, the oil content is extremely high, leaving a greasy texture, and the product is highly susceptible to rapid oxidative rancidity in hot, humid conditions.

Strong seasonality of raw materials and pressure for continuous production: The jackfruit harvest season in East Africa is concentrated, requiring large batches of fresh fruit to be processed and dehydrated within a short period — a demanding test of the equipment's continuous, stable operation in hot, humid environments.

2. Xinlianxing's Customized Solution

Xinlianxing deployed for them a tailor-made LXZK-1200 (200kg class / Model 1200) industrial vacuum low-temperature frying system.

Gentle vacuum dehydration of high-sugar tropical flesh: Leveraging the principle that vacuum negative pressure lowers the boiling point of oil and water, moisture inside the jackfruit flesh is rapidly drawn out in a gentle negative-pressure environment far below the caramelization point. This effectively suppresses fructose caramelization and perfectly preserves the jackfruit's natural golden color and distinctive aroma.

Variable-frequency spin-drying for fibrous materials and fully automatic continuous fine filtration: Equipped with a variable-frequency centrifugal de-oiling module and a bypass continuous fine-filtration oil storage system, residual oil trapped in the gaps of the stringy fibers is spun out instantly by high-speed centrifugal force upon unloading, while dislodged sugar and fruit-acid particles are filtered online, preventing oil deterioration.

Heavy-duty anti-corrosion and high-efficiency structure: The entire machine is made of thickened SUS304 food-grade stainless steel, with reinforced corrosion resistance and anti-adhesion treatment on components in contact with high-sugar fruit acids. Free of sanitary dead corners and extremely easy to clean, it ensures long-term, stable, continuous operation in East Africa's hot, humid environment.

3. Quantified Value and Efficiency Gains

⚡ 200kg Mass-Production-Level High Throughput:

Continuous processing with high fresh-fruit throughput: The standard 200kg-class batch throughput connects the entire production chain at the Ugandan plant — from peeling and cutting fresh fruit to industrial packaging.

Smart recipe storage: The PLC intelligent control system precisely records the jackfruit-specific vacuum and de-oiling profiles. One-touch adjustment ensures highly consistent moisture content and golden appearance across batches.

Preserving the Natural Golden Color and Crunchy Texture:

Dual preservation of appearance and nutrition: Completely eliminating the blackening and bitterness of traditional frying, the jackfruit slices display an attractive natural golden color while retaining rich dietary fiber and natural fruit aroma.

Extremely low residual oil and extended shelf life: Centrifugal de-oiling leaves the finished product surface clean and non-greasy, significantly delaying oil oxidation and helping the client successfully enter East African premium supermarkets and Middle East export markets.

Reduced Consumables and Operating Costs:

Significantly extended oil replacement intervals: The continuous in-line fine filtration system removes high-sugar pectin particles, reducing waste oil disposal and consumable expenses, and cutting the plant's long-term operating costs.

4. Client Testimonial and Endorsement

**“Jackfruit is an extremely difficult tropical fruit to process. With its very high sugar content and fibrous structure, it almost always turns black, bitter, and oil-soaked in traditional frying. The 200kg industrial vacuum frying equipment provided by Xinlianxing has demonstrated technical performance that amazed us.

Its vacuum temperature control and variable-frequency spin-drying systems perform with exceptional precision. The fried jackfruit slices not only retain a vivid golden color and excellent crunchy texture, but the oil content has also dropped to an extremely low level. This machine has helped us successfully transform the region's abundant jackfruit resources into high-value, export-grade healthy snacks — the most successful investment we have made in East African agricultural deep-processing.”**
