1. Client Background & Challenges (Background & Challenge)

Client background: A well-known large Indian snack food and FMCG giant, mainly engaged in the industrial production of premium local potato fries, potato chips, and crisps made from India's distinctive root and tuber agricultural products.

Pain points of India's French fry processing industry:

Browning and charring caused by high reducing sugar: Local Indian potato varieties have a high reducing sugar content, and under the high-temperature environment of traditional frying they are highly prone to intense Maillard reactions, causing the fry surface to rapidly blacken and become bitter, and posing a hidden risk of exceeding acrylamide limits.

Demand for flexible production and multi-category switching: The client needed both a stable, large-volume main production line for fries and the flexibility to handle small-batch, multi-flavor, or special-specification crisps made from local agricultural products.

Rapid oil deterioration under high temperature and humidity: In South Asia's hot and humid environment, traditional frying oil is highly prone to oxidative rancidity, bringing unbearable waste-oil expenses and a greasy taste.

 

2. Xinlianxing's Customized Solution (The Solution)

Xinlianxing built for the client a flexible modular vacuum frying production matrix consisting of "2 x LXZK-50 (Model 50) + 1 x LXZK-1100 (Model 100)".

Gentle negative-pressure dehydration for high-sugar potatoes: By using vacuum negative pressure to lower the boiling points of water and oil, moisture inside the potato is rapidly extracted at a gentle temperature, inhibiting sugar caramelization at the source and perfectly preserving the potato's golden original color and high crispness.

"Large-plus-small" flexible modular architecture:

Model 100 main unit (LXZK-1100): Handles large-batch continuous production of core high-volume categories (such as classic original-flavor fries).

2 x Model 50 main units (LXZK-50): Handle parallel processing of high-value-added, multi-flavor, or customized small-batch fries/root-tuber crisps; the two smaller machines alternate flexibly, greatly enhancing the scheduling resilience of the entire plant line.

Variable-frequency spin-drying and fully automatic continuous fine filtration: Equipped with a variable-frequency centrifugal de-oiling module and a bypass continuous fine-filtration oil storage system, it spins off surface residual oil at maximum speed the instant the tank is opened, filters out fine starch particles in real time, and blocks the rise in oil acid value.

⚡ 200kg+ modular flexible throughput:

Dual optimization of capacity and scheduling: The Model 100 combined in parallel with two Model 50 units provides a total single-pass processing capacity of over 200kg (fresh material). The plant can freely combine start/stop combinations according to order size, avoiding the energy waste of "a big horse pulling a small cart."

Zero waiting for category switching: The smaller machines can switch to new flavor recipes at any time without emptying the large main unit's oil tank, significantly improving the overall equipment utilization rate.

Golden color and a benchmark for low-fat health:

Greatly improved finished-product qualification rate: The bottleneck of high-sugar potatoes easily frying black and dark has been completely solved; the fries present an enticing golden color, with appearance and quality fully meeting the standards of international fast-food and supermarket chains.

Extremely low oil content: The finished product surface is clean and not greasy, greatly extending the product's shelf life in tropical climates.

Lower consumable and operating costs:

Extended frying oil service life: Continuous inline fine filtration greatly removes starch caramelization particles, significantly lengthening the frying oil's reuse cycle and cutting huge oil costs for the plant.
