Canadian Snack Food Manufacturer: Deployed a 300kg Industrial Vacuum Frying System, Breaking Through the Bottlenecks of Acrylamide Control and High Oil Content in Potato Fries
1. Customer Background & Challenge
Customer background: A renowned Canadian manufacturer specializing in deep processing of agricultural products and snack food production, primarily engaged in the deep processing of premium North American potatoes and healthy fries/chips products.
Pain points of the potato processing industry:
Maillard reaction darkening and health risks: Potatoes are rich in reducing sugars and asparagine, which easily trigger the Maillard reaction during traditional high-temperature frying, causing the fry surface to darken and char while creating potential acrylamide risks.
Persistently high oil content: Traditional fried fries typically retain a high oil content, failing to meet North American consumers' demand for premium snacks that are “low-fat, healthy, and naturally crispy.”
Moisture absorption, softening, and shortened shelf life: Under North America's cold and humid climate, high moisture content and residual oil can easily cause fries to absorb moisture and lose crispness quickly during storage, severely restricting the expansion of cross-province and export supply chains.
2. Xinlianxing Customized Solution (The Solution)
Xinlianxing deployed one LXZK-1300 industrial vacuum low-temperature frying system tailored to the customer's needs.
Starch freshness locking and gentle dehydration: Leveraging the principle of reduced boiling point under negative pressure, the system rapidly completes explosive dehydration of internal moisture and starch gelatinization at temperatures far below traditional frying, perfectly inhibiting reducing sugar charring and preserving the potatoes' natural golden color.
Variable-frequency centrifugal de-oiling and ultra-low residual oil control: Equipped with a variable-frequency centrifugal de-oiling module and a continuous online filtration system, it rapidly spins off excess surface oil the moment frying is completed, keeping the finished product's oil content far below that of traditional fried fries.
PLC automation and full-process control: The entire machine is automatically controlled via an intelligent PLC touchscreen, allowing precise adjustment of the operating curve according to the moisture content of different potato varieties, ensuring batch consistency in high-volume continuous production.
3. Quantified ROI & Impact
⚡ 300kg high capacity and high utilization rate:
High-throughput continuous delivery: With a maximum single-batch loading capacity of 300kg, the system effectively completes the Canadian plant's continuous production line from fresh potato cutting to finished product packaging.
Significantly improved dehydration efficiency: The efficient heat transfer and steam path design markedly shortens the fries' processing cycle and increases the plant's total daily output.
Healthier attributes and a leap in taste:
Natural golden color and high crispness: Darkening and charring are completely eliminated; fries display a full golden color with a uniform internal honeycomb structure, delivering a unique “crispy outside, tender inside, crunchy yet not greasy” texture.
Meeting North American health food access standards: The extremely low oil content and healthy process characteristics helped the customer successfully secure long-term orders from premium North American organic supermarkets and health retailers.
Reduced oil costs and energy consumption:
Significantly extended frying oil life: The continuous online filtration effectively removes starch particles from the fries, delaying oil rancidity and deterioration while substantially reducing the plant's oil costs and waste oil disposal expenses.
4. Client Endorsement
“When frying potato materials on a large scale, the hardest things to control are surface darkening and oil content. The stability of Xinlianxing's 300kg industrial vacuum frying equipment during continuous operation exceeded our expectations. Its variable-frequency de-oiling and intelligent temperature control systems performed exceptionally well. The fries it produces not only retain the natural golden color and high crispness of potatoes, but also have a significantly reduced oil content. This equipment helped us successfully enter the North American premium healthy snack market and is the most successful investment we have made in process upgrading.”
