Customer background: A renowned Nigerian enterprise specializing in deep processing of agricultural products and manufacturing of snack foods, leveraging the region's abundant natural banana and plantain (Plantain) resources, mainly producing healthy crispy chips of tropical fruits and vegetables.

Industry pain points in banana chip processing:

Rapid scorching and darkening caused by pectin and sugars: Tropical bananas contain extremely high levels of fructose and pectin. Under traditional high-temperature frying, they readily trigger intense Maillard reactions and sugar caramelization, causing the chip surface to darken quickly and taste bitter.

High oil content and softening from moisture absorption: Traditionally fried banana chips retain high oil content. In West Africa's hot and humid climate, residual surface oil readily accelerates oxidative rancidity, causing the product to absorb moisture quickly, lose its crispy texture, and have a severely shortened shelf life.

Gentle vacuum dehydration for high-sugar tropical fruit: By leveraging the principle that vacuum negative pressure lowers the boiling points of water and oil, moisture inside the bananas is rapidly drawn out under gentle temperature control, effectively suppressing fructose caramelization while perfectly locking in the bananas' natural golden color and rich fruity aroma.

Variable-frequency spin-drying and fully automatic continuous precision filtration: Equipped with a variable-frequency centrifugal de-oiling module and a bypass continuous precision-filtration oil storage system, it spins residual oil off the banana chip surfaces the instant they leave the tank, filters out detached pectin particles in real time, and halts the rise of the oil acid value.

High-efficiency thermal design for stable operation: Optimized heating circuits and insulation structures, paired with an intelligent PLC one-touch control system, significantly reduce energy consumption per unit of production while ensuring continuous, stable operation in complex tropical environments.
